One pot meals and sheet pan meals are a dinner lifesaver and this One Pot Sausage Pasta is a favorite at our house. My boys LOVE it and I love that it comes together in no time!

With this recipe, you don’t have to boil the pasta first, it cooks right in the pot with all of the other ingredients. It is the perfect weeknight meal!

The penne pasta is coated in a rich marinara sauce with hearty sausage, veggies, and lots of cheese. It only takes 30 minutes to make and is so good with garlic bead and a simple salad on the side.

Make sure you add this One Pot Sausage Pasta to your dinner rotation. It is guaranteed to be a family favorite!

Sausage Pasta Ingredients

  • Olive oil– for sautéing!
  • Sausage– you can use chicken or smoked sausage links. Slice into 1/2-inch thick slices.
  • Onion– a yellow or white onion.
  • Red bell pepper– seeds removed and diced.
  • Garlic– a must for pasta!
  • Tomato paste– to give the sauce a rich tomato flavor!
  • Kale– we love using kale because it is hearty and holds up nicely, but spinach will also work.
  • Diced tomatoes– don’t drain, use the whole can.
  • Herbs– dried basil, oregano, and fennel seed.
  • Pasta– we use penne pasta, but other small noodles like rotini, farfalle, or orecchiette, will also work. If you need the recipe to be gluten-free, you can use gluten-free pasta.
  • Broth– you an use vegetable or chicken broth.
  • Mozzarella cheese– we like to use fresh mozzarella because it gets super melty. Just chop it up. If you don’t have fresh mozzarella, you can use shredded mozzarella.
  • Parmesan cheese– more cheese please!
  • Fresh basil– for garnish!

How to Make One Pot Sausage Pasta

  • Heat a large skillet or pot over medium heat and add the olive oil. Add the sausage slices, onion, red pepper, and garlic. Cook, stirring often, until the onion and peppers are tender and the sausage is cooked through, about 5-7 minutes.
  • Add the tomato paste and stir. Add in the chopped kale, diced tomatoes, basil, oregano, and fennel seed.
  • Add in penne pasta and broth. Stir until combined. Cover with a lid and cook for 8-10 minutes, stirring occasionally, or until pasta is al dente.
  • Remove lid, stir and add in the fresh mozzarella cheese. Stir and cook until cheese is melted. Top with Parmesan cheese and fresh basil. Serve warm.
  • Pro tip- If you don’t have a lid for your pot or skillet, you can place a large baking sheet over the skillet/pot to cover.

What to Serve With Sausage Pasta

This easy one pot meal is very satisfying, but if you want to serve a few dishes on the side, these are all winners!

How to Store

Store leftover sausage pasta in an airtight container in the refrigerator for up to 4 days. You can reheat in the microwave or oven. The leftovers are GREAT!

  • Note-we like to use our 10-inch cast iron skillet. If you don't have a lid for your pot or skillet, you can place a large baking sheet over the skillet/pot to cover. You can also use DeLallo's whole wheat or gluten free pasta in this recipe.
